  • 2 tomatoes, diced
  • 1 cup coconut milk
  • 2 tbsp curry powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp turmeric
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
  3. Add the chicken pieces and brown on all sides.
  4. Stir in the curry powder, paprika, cumin, and turmeric. Cook for 2 minutes to toast the spices.
  5. Add the diced tomatoes and cook for 5 minutes, stirring occasionally.
  6. Pour in the coconut milk and chicken broth. Season with salt and pepper. Bring to a simmer.
  7. Add the sliced plantains to the pot and stir gently to combine.
  8. Cover the pot and simmer for 25-30 minutes, or until the chicken is cooked through and the plantains are tender.
  9. Adjust seasoning if needed and serve hot.
