Poulet au curry coco, or Coconut Curry Chicken, is a popular dish in French Guianan Cuisine. This flavorful and aromatic dish is made with tender chicken pieces cooked in a rich and creamy coconut curry sauce, infused with a blend of traditional spices.
Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Season the chicken thighs with salt and pepper.
- In a large skillet, heat the vegetable oil over medium heat. Add the chicken thighs and cook until golden brown on both sides. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Sauté until softened.
- Stir in the curry powder, turmeric, cumin, and coriander. Cook for 1-2 minutes until fragrant.
- Pour in the coconut milk and chicken broth. Bring to a simmer.
- Return the chicken thighs to the skillet. Cover and simmer for 30-35 minutes, or until the chicken is cooked through and the sauce has thickened.
- Garnish with fresh cilantro and serve hot with steamed rice or crusty bread.
