Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the chicken thighs and cook until golden brown on both sides. Remove from the skillet and set aside.
  3. In the same skillet, add the chopped onion and garlic. Sauté until softened.
  4. Stir in the curry powder, turmeric, cumin, and coriander. Cook for 1-2 minutes until fragrant.
  5. Pour in the coconut milk and chicken broth. Bring to a simmer.
  6. Return the chicken thighs to the skillet. Cover and simmer for 30-35 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. Garnish with fresh cilantro and serve hot with steamed rice or crusty bread.
