Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 2 tablespoons tomato paste
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- Season the chicken thighs with salt and pepper.
- Heat the vegetable oil in a large skillet over medium heat. Add the chicken thighs and cook until golden brown on both sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened. Add the minced garlic, curry powder, cumin, and coriander. Cook for 1-2 minutes until fragrant.
- Pour in the coconut milk, chicken broth, and tomato paste. Stir to combine and bring to a simmer.
- Return the chicken thighs to the skillet, cover, and simmer for 30 minutes or until the chicken is cooked through and the sauce has thickened.
- Adjust the seasoning with salt and pepper if needed. Garnish with chopped cilantro before serving.
