Poulet Basquaise (Basque-Style Chicken)
Basque-Style Chicken, also known as Poulet Basquaise, is a classic French dish originating from the Basque region. It features tender chicken cooked in a flavorful tomato and pepper sauce, infused with the rich and aromatic flavors of the Basque cuisine.
Ingredients
- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1/2 cup chicken broth
- 2 teaspoons paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the chicken thighs with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook until browned on both sides. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened. Add the minced garlic and cook for another minute.
- Add the sliced bell peppers to the skillet and cook until they begin to soften.
- Pour in the diced tomatoes and chicken broth. Stir to combine, then return the chicken thighs to the skillet.
- Simmer the chicken in the sauce for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
- Adjust seasoning with salt and pepper if needed. Garnish with fresh parsley before serving.
