Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup chicken broth
  • 2 teaspoons paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken thighs with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook until browned on both sides. Remove from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until softened. Add the minced garlic and cook for another minute.
  4. Add the sliced bell peppers to the skillet and cook until they begin to soften.
  5. Pour in the diced tomatoes and chicken broth. Stir to combine, then return the chicken thighs to the skillet.
  6. Simmer the chicken in the sauce for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. Adjust seasoning with salt and pepper if needed. Garnish with fresh parsley before serving.
