Ingredients
- 4 chicken thighs
- 2 red bell peppers, sliced
- 2 yellow onions, chopped
- 4 garlic cloves, minced
- 4 tomatoes, diced
- 1/2 cup dry white wine
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook until browned on both sides. Remove and set aside.
- In the same skillet, add the onions, bell peppers, and garlic. Cook until softened.
- Add the diced tomatoes, white wine, and cayenne pepper. Stir to combine.
- Return the chicken thighs to the skillet. Cover and simmer for 45 minutes, or until the chicken is cooked through.
- Adjust seasoning with salt and pepper if needed. Serve the Poulet Basquaise hot.
