Ingredients
- 4 chicken thighs
- 1 cup creamy peanut butter
- 1 onion, chopped
- 2 tomatoes, diced
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 cup chicken broth
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt and pepper, then grill them until fully cooked. Set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
- Add the diced tomatoes and bell pepper to the pot, and cook until they soften.
- Stir in the peanut butter and chicken broth, and simmer the sauce for 10-15 minutes, stirring occasionally.
- Add the grilled chicken thighs to the pot, and coat them with the peanut sauce. Simmer for an additional 5-10 minutes.
- Adjust the seasoning with salt and pepper, if needed.
