Ingredients

  • 4 chicken thighs
  • 1 cup creamy peanut butter
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 cup chicken broth
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt and pepper, then grill them until fully cooked. Set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
  3. Add the diced tomatoes and bell pepper to the pot, and cook until they soften.
  4. Stir in the peanut butter and chicken broth, and simmer the sauce for 10-15 minutes, stirring occasionally.
  5. Add the grilled chicken thighs to the pot, and coat them with the peanut sauce. Simmer for an additional 5-10 minutes.
