Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 ripe pineapple, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeno, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix the olive oil, paprika, garlic powder, onion powder, salt, and pepper. Rub the mixture over the chicken breasts.
  3. Grill the chicken for 6-7 minutes on each side, or until fully cooked and grill marks appear. Remove from the grill and let it rest for a few minutes.
  4. In a medium bowl, combine the diced pineapple, red bell pepper, red onion, jalapeno, cilantro, lime juice, and salt to make the salsa.
