Poulet Yassa (peanut Fritters)

Ingredients

  • 1 whole chicken, cut into pieces
  • 4 onions, thinly sliced
  • 1/2 cup peanut butter
  • 2 lemons, juiced
  • 4 cloves garlic, minced
  • 1 hot pepper, chopped
  • 2 cups flour
  • 1/2 cup ground peanuts
  • 1 tsp baking powder
  • 1 cup water
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine the chicken pieces, sliced onions, peanut butter, lemon juice, minced garlic, hot pepper, salt, and pepper. Let it marinate for at least 1 hour.
  2. While the chicken is marinating, prepare the peanut fritters. In a separate bowl, mix the flour, ground peanuts, baking powder, and water to form a thick batter.
  3. Heat oil in a deep pan for frying. Drop spoonfuls of the batter into the hot oil and fry until golden brown. Remove and drain on paper towels.
  4. After marinating, transfer the chicken and marinade to a large pot. Cook over medium heat until the chicken is tender and the sauce has thickened, about 30 minutes.
  5. Serve the Poulet Yassa with the Peanut Fritters on the side.
