Poulet Yassa (peanut Fritters)
Poulet Yassa is a popular dish in Guinean cuisine, featuring marinated chicken in a tangy onion and mustard sauce. In this recipe, we'll be adding a delicious twist by creating Peanut Fritters to accompany the Poulet Yassa.
Ingredients
- 1 whole chicken, cut into pieces
- 4 onions, thinly sliced
- 1/2 cup peanut butter
- 2 lemons, juiced
- 4 cloves garlic, minced
- 1 hot pepper, chopped
- 2 cups flour
- 1/2 cup ground peanuts
- 1 tsp baking powder
- 1 cup water
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine the chicken pieces, sliced onions, peanut butter, lemon juice, minced garlic, hot pepper, salt, and pepper. Let it marinate for at least 1 hour.
- While the chicken is marinating, prepare the peanut fritters. In a separate bowl, mix the flour, ground peanuts, baking powder, and water to form a thick batter.
- Heat oil in a deep pan for frying. Drop spoonfuls of the batter into the hot oil and fry until golden brown. Remove and drain on paper towels.
- After marinating, transfer the chicken and marinade to a large pot. Cook over medium heat until the chicken is tender and the sauce has thickened, about 30 minutes.
- Serve the Poulet Yassa with the Peanut Fritters on the side.
