Ingredients
- 4 large eggs
- 1 cup diced cooked potatoes
- 1/2 cup cheese curds
- 1/4 cup diced green onions
- 1/4 cup diced ham or cooked bacon (optional)
- 1/4 cup all-purpose flour
- 1/4 cup water
- 1/4 cup vegetable oil
- 1/2 cup beef or chicken gravy

Instructions
- In a bowl, beat the eggs and mix in the diced potatoes, cheese curds, green onions, and ham or bacon (if using).
