Ingredients

  • 1 whole duck, about 5 pounds
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon caraway seeds
  • 2 onions, quartered
  • 4 cloves garlic, crushed
  • 2 bay leaves
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Pat the duck dry with paper towels and season it inside and out with salt, pepper, and caraway seeds.
  3. Stuff the cavity of the duck with onions, garlic, and bay leaves.
  4. Place the duck on a rack in a roasting pan and add the chicken broth to the pan.
  5. Cover the duck with foil and roast for 1 hour.
  6. Remove the foil and continue roasting for another hour, basting the duck with the pan juices every 20 minutes.
  7. Once the duck is golden brown and the skin is crispy, remove it from the oven and let it rest for 10 minutes before carving.
