Ingredients
- 1 whole duck, about 5 pounds
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon caraway seeds
- 2 onions, quartered
- 4 cloves garlic, crushed
- 2 bay leaves
- 1 cup chicken broth
Instructions
- Preheat the oven to 350°F (175°C).
- Pat the duck dry with paper towels and season it inside and out with salt, pepper, and caraway seeds.
- Stuff the cavity of the duck with onions, garlic, and bay leaves.
- Place the duck on a rack in a roasting pan and add the chicken broth to the pan.
- Cover the duck with foil and roast for 1 hour.
- Remove the foil and continue roasting for another hour, basting the duck with the pan juices every 20 minutes.
- Once the duck is golden brown and the skin is crispy, remove it from the oven and let it rest for 10 minutes before carving.
