Prague Castle Roast Pork (Pražský hrad pečené vepřové)

Ingredients

  • 1.5 kg pork shoulder
  • 2 tsp caraway seeds
  • 2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cloves garlic, minced
  • 2 onions, sliced
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. In a small bowl, mix together the caraway seeds, paprika, salt, pepper, and minced garlic to create a spice rub.
  3. Rub the spice mixture all over the pork shoulder, ensuring it is evenly coated.
  4. Place the sliced onions in the bottom of a roasting pan and pour the chicken broth over them.
  5. Place the seasoned pork shoulder on top of the onions in the roasting pan.
  6. Cover the roasting pan with foil and roast in the preheated oven for 1.5 hours.
  7. Remove the foil and continue roasting for another 30 minutes, or until the pork is golden brown and tender.
  8. Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing.
  9. Serve the Prague Castle Roast Pork with the roasted onions and pan juices.
