Ingredients
- 4 large onions, thinly sliced
- 4 tbsp butter
- 1 tbsp all-purpose flour
- 6 cups beef or vegetable broth
- 1 tsp sugar
- Salt and pepper to taste
- 4 slices of bread
- 1 cup grated cheese (such as Gruyère or Swiss)
Instructions
- In a large pot, melt the butter over medium heat. Add the sliced onions and cook until caramelized, about 20-30 minutes.
- Sprinkle the flour over the caramelized onions and cook for an additional 2-3 minutes, stirring constantly.
- Pour in the beef or vegetable broth and add the sugar. Season with salt and pepper to taste. Bring the soup to a simmer and cook for 20-30 minutes.
- Preheat the broiler. Ladle the soup into oven-safe bowls. Top each bowl with a slice of bread and a generous amount of grated cheese.
- Place the bowls on a baking sheet and broil until the cheese is melted and bubbly, about 2-3 minutes.
- Remove from the broiler and let the soup cool for a few minutes before serving.
