Prawn and Coconut Curry (Caril de Camarão e Coco)

Ingredients

  • 500g prawns, peeled and deveined
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 can (400ml) coconut milk
  • 1 tomato, chopped
  • 1 green chili, sliced
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Add the ground cumin, coriander, turmeric, and paprika to the pan, and stir for a minute to release the flavors of the spices.
  3. Pour in the coconut milk and bring the mixture to a gentle simmer.
  4. Add the prawns, chopped tomato, and green chili to the pan, and cook for 5-7 minutes until the prawns are cooked through.
  5. Season with salt to taste and garnish with fresh cilantro.
