Prawn and Coconut Curry (Caril de Camarão e Coco)

Ingredients
- 500g prawns, peeled and deveined
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 can (400ml) coconut milk
- 1 tomato, chopped
- 1 green chili, sliced
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the ground cumin, coriander, turmeric, and paprika to the pan, and stir for a minute to release the flavors of the spices.
- Pour in the coconut milk and bring the mixture to a gentle simmer.
- Add the prawns, chopped tomato, and green chili to the pan, and cook for 5-7 minutes until the prawns are cooked through.
- Season with salt to taste and garnish with fresh cilantro.
