Ingredients
- 500g fresh prawns, peeled and deveined
- 400g fresh egg noodles
- 1.5 liters chicken stock
- 3 cloves garlic, minced
- 2 shallots, sliced
- 2 tablespoons chili paste
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon vegetable oil
- 1 teaspoon sugar
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pot over medium heat. Add garlic and shallots, and sauté until fragrant.
- Add chili paste and stir for a minute. Then, pour in the chicken stock and bring to a boil.
- Reduce the heat to a simmer and add soy sauce, fish sauce, and sugar. Let the broth simmer for 20 minutes.
- Meanwhile, cook the egg noodles according to the package instructions. Drain and set aside.
- Add the prawns to the simmering broth and cook for 3-4 minutes until they turn pink and opaque.
- Divide the cooked noodles into serving bowls and ladle the prawn broth over the noodles.
- Season with salt and pepper to taste. Serve hot and enjoy!
