Prawn Noodle Paradise

Ingredients

  • 500g fresh prawns, peeled and deveined
  • 400g fresh egg noodles
  • 1.5 liters chicken stock
  • 3 cloves garlic, minced
  • 2 shallots, sliced
  • 2 tablespoons chili paste
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add garlic and shallots, and sauté until fragrant.
  2. Add chili paste and stir for a minute. Then, pour in the chicken stock and bring to a boil.
  3. Reduce the heat to a simmer and add soy sauce, fish sauce, and sugar. Let the broth simmer for 20 minutes.
  4. Meanwhile, cook the egg noodles according to the package instructions. Drain and set aside.
  5. Add the prawns to the simmering broth and cook for 3-4 minutes until they turn pink and opaque.
  6. Divide the cooked noodles into serving bowls and ladle the prawn broth over the noodles.
  7. Season with salt and pepper to taste. Serve hot and enjoy!
