Ingredients
- 500g fresh prawns, shells removed and deveined
- 300g yellow noodles
- 4 cups chicken stock
- 3 cloves garlic, minced
- 2 shallots, finely chopped
- 1 tablespoon chili paste
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1 cup bean sprouts
- 2 hard-boiled eggs, halved
- Fried shallots for garnish
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the garlic and shallots, and sauté until fragrant.
- Add the chili paste and prawns, and cook until the prawns turn pink.
- Pour in the chicken stock, soy sauce, fish sauce, sugar, and sesame oil. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Cook the yellow noodles according to the package instructions, then divide them into serving bowls.
- Divide the bean sprouts and hard-boiled eggs among the bowls.
- Ladle the prawn soup over the noodles and garnish with fried shallots and cilantro.
