Prawn Noodle Soup Adventure

Ingredients

  • 500g fresh prawns, shells removed and deveined
  • 300g yellow noodles
  • 4 cups chicken stock
  • 3 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1 tablespoon chili paste
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1 cup bean sprouts
  • 2 hard-boiled eggs, halved
  • Fried shallots for garnish
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the garlic and shallots, and sauté until fragrant.
  2. Add the chili paste and prawns, and cook until the prawns turn pink.
  3. Pour in the chicken stock, soy sauce, fish sauce, sugar, and sesame oil. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  4. Cook the yellow noodles according to the package instructions, then divide them into serving bowls.
  5. Divide the bean sprouts and hard-boiled eggs among the bowls.
  6. Ladle the prawn soup over the noodles and garnish with fried shallots and cilantro.
