Ingredients

  • 500g prawns, shells and heads removed
  • 300g yellow noodles
  • 1 liter chicken stock
  • 3 cloves garlic, minced
  • 2 shallots, sliced
  • 2 tablespoons chili paste
  • 2 tablespoons cooking oil
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • Salt to taste
  • Chopped spring onions for garnish

Instructions

  1. Heat the cooking oil in a pot and sauté the garlic and shallots until fragrant.
  2. Add the chili paste and stir-fry for a minute.
  3. Pour in the chicken stock and bring it to a boil.
  4. Add the prawns, soy sauce, oyster sauce, and sugar. Simmer for 10 minutes.
  5. Cook the yellow noodles according to the package instructions.
  6. Divide the noodles into serving bowls and ladle the prawn soup over the noodles.
  7. Garnish with chopped spring onions and serve hot.
