Ingredients
- 500g prawns, cleaned and deveined
- 1 cup thick coconut milk
- 1 onion, finely chopped
- 2 green chilies, slit
- 1-inch ginger, julienned
- 4 cloves garlic, minced
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 sprig curry leaves
- 2 tablespoons coconut oil
- Salt to taste
Instructions
- Heat coconut oil in a pan and sauté the onions, green chilies, ginger, and garlic until the onions turn translucent.
- Add the turmeric powder, red chili powder, and coriander powder. Sauté for a minute.
- Add the prawns and cook for 2-3 minutes until they turn pink.
- Pour in the thick coconut milk and simmer for 5-7 minutes until the prawns are cooked through.
- Garnish with curry leaves and adjust the seasoning with salt.
