Prawns Mango Curry, also known as Chemeen Manga Curry, is a traditional dish from the coastal state of Kerala in South India. Prawns Mango Curry (chemeen Manga Curry)

Ingredients

  • 500g prawns, cleaned and deveined
  • 2 ripe mangoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 green chili, slit
  • 1 sprig curry leaves
  • 1-inch ginger, grated
  • 3-4 garlic cloves, minced
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp fenugreek seeds
  • 1/2 tsp mustard seeds
  • 1/2 cup coconut milk
  • Salt to taste
  • 2 tbsp coconut oil

Instructions

  1. Heat coconut oil in a pan and splutter mustard seeds and fenugreek seeds.
  2. Add chopped onions, green chili, curry leaves, ginger, and garlic. Sauté until the onions turn golden brown.
  3. Add chopped tomatoes and cook until they turn mushy.
  4. Add turmeric powder, red chili powder, and coriander powder. Sauté for a minute.
  5. Add diced mangoes and cook until they soften.
  6. Add cleaned prawns and cook for 5 minutes.
  7. Pour coconut milk and simmer for a few minutes until the curry thickens.
  8. Adjust the seasoning with salt and remove from heat.
