Pribilof Island Paella

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb chicken thighs, boneless and skinless
  • 1 chorizo sausage, sliced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 cup frozen peas
  • 2 cups Arborio rice
  • 4 cups chicken broth
  • 1 teaspoon saffron threads
  • 1 teaspoon smoked paprika
  • 1 lemon, cut into wedges
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large paella pan or skillet, heat some olive oil over medium-high heat. Add the chicken thighs and cook until browned on both sides. Remove and set aside.
  2. Add the chorizo to the pan and cook until browned. Remove and set aside with the chicken.
  3. Sauté the onion, garlic, and red bell pepper until softened.
  4. Stir in the Arborio rice, saffron, and smoked paprika, then pour in the chicken broth. Bring to a simmer.
  5. Return the chicken and chorizo to the pan, along with the shrimp and frozen peas. Cook for about 20 minutes until the rice is tender and the liquid is absorbed.
  6. Garnish with fresh parsley and serve with lemon wedges.
