Pribilof Island Paella

Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb chicken thighs, boneless and skinless
- 1 chorizo sausage, sliced
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 cup frozen peas
- 2 cups Arborio rice
- 4 cups chicken broth
- 1 teaspoon saffron threads
- 1 teaspoon smoked paprika
- 1 lemon, cut into wedges
- Fresh parsley, chopped for garnish
Instructions
- In a large paella pan or skillet, heat some olive oil over medium-high heat. Add the chicken thighs and cook until browned on both sides. Remove and set aside.
- Add the chorizo to the pan and cook until browned. Remove and set aside with the chicken.
- Sauté the onion, garlic, and red bell pepper until softened.
- Stir in the Arborio rice, saffron, and smoked paprika, then pour in the chicken broth. Bring to a simmer.
- Return the chicken and chorizo to the pan, along with the shrimp and frozen peas. Cook for about 20 minutes until the rice is tender and the liquid is absorbed.
- Garnish with fresh parsley and serve with lemon wedges.
