Ingredients

  • 1 kg mixed seafood (mussels, shrimp, squid)
  • 4 potatoes, sliced
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tomatoes, chopped
  • 1/2 cup white wine
  • 1/4 cup olive oil
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Layer the sliced potatoes, onions, garlic, bell peppers, and tomatoes in a large roasting pan.
  3. Arrange the mixed seafood on top of the vegetables.
  4. Drizzle the white wine and olive oil over the seafood and vegetables.
  5. Sprinkle the dried oregano, salt, and pepper over the entire dish.
  6. Cover the roasting pan with a lid or aluminum foil.
  7. Bake in the preheated oven for 2 hours, or until the seafood is cooked through and the potatoes are tender.
