Provencal Beef Stew (daube Provençale)

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 onions, chopped
  • 4 carrots, sliced
  • 1 cup red wine
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven, heat 2 tbsp of olive oil over medium-high heat.
  2. Season the beef cubes with salt and pepper, then brown them in the hot oil. Remove the beef and set aside.
  3. Heat the remaining 2 tbsp of olive oil in the same pot and sauté the garlic, onions, and carrots until they start to soften.
  4. Pour in the red wine and let it simmer for a few minutes, scraping up any browned bits from the bottom of the pot.
  5. Return the beef to the pot and add the diced tomatoes, beef broth, bay leaves, and thyme. Season with salt and pepper.
  6. Bring the stew to a simmer, then reduce the heat to low and cover. Let it cook for 2-3 hours, stirring occasionally, until the beef is tender.
  7. Adjust the seasoning if needed and serve the Provencal Beef Stew hot, with crusty bread or over cooked pasta.
