Ingredients

  • 1 pre-made pie crust
  • 1 small eggplant, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded Gruyère cheese
  • 4 eggs
  • 1 cup heavy cream
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh basil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the pie crust in a tart pan and trim any excess dough.
  3. In a large skillet, heat the olive oil over medium heat. Sauté the eggplant, zucchini, and bell peppers until tender. Season with salt and pepper.
