Pâté de Campagne (Country Pâté)
Country Pâté, also known as Pâté de Campagne, is a classic French terrine made with ground pork, liver, and aromatic herbs. It's a delicious and rustic dish that is perfect for entertaining or enjoying as a savory snack.
Ingredients
- 1 lb ground pork
- 8 oz pork liver, finely chopped
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup brandy
- 1/2 tsp dried thyme
- 1/2 tsp ground allspice
- 1/2 tsp ground nutmeg
- 1/2 cup heavy cream
- 2 eggs
- Salt and pepper to taste
Instructions
- In a large bowl, combine the ground pork, pork liver, onion, garlic, parsley, brandy, thyme, allspice, nutmeg, and heavy cream. Mix well.
- Add the eggs to the mixture and season with salt and pepper. Mix until everything is well combined.
- Preheat the oven to 350°F (175°C).
- Line a terrine or loaf pan with bacon slices, leaving some overhang.
- Transfer the pâté mixture into the pan and press it down evenly.
- Fold the overhanging bacon slices over the top of the pâté.
- Cover the pan with aluminum foil and place it in a larger baking dish. Fill the larger dish with hot water to create a water bath.
- Bake for 1 hour, then remove the foil and bake for an additional 15 minutes to brown the top.
- Remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours before serving.
