Puchero Canario (Canarian Pot-au-Feu)

Ingredients

  • 1 lb beef stew meat
  • 1 lb pork ribs
  • 2 chorizo sausages
  • 2 potatoes, peeled and diced
  • 2 sweet potatoes, peeled and diced
  • 2 carrots, peeled and sliced
  • 1 onion, chopped
  • 1 leek, sliced
  • 1 can chickpeas, drained and rinsed
  • 1 cabbage, chopped
  • 1 tsp paprika
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Place the beef stew meat and pork ribs in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour.
  2. Add the chorizo, potatoes, sweet potatoes, carrots, onion, leek, chickpeas, paprika, bay leaf, salt, and pepper to the pot. Simmer for an additional 30 minutes.
  3. Add the cabbage to the pot and simmer for another 15 minutes, or until all the ingredients are tender.
  4. Remove the bay leaf and serve the Puchero Canario hot.
