Puchero Canario (Canarian Pot-au-Feu)
The Canarian Pot-au-Feu, also known as Puchero Canario, is a traditional dish from the Canary Islands that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 1 lb beef stew meat
- 1 lb pork ribs
- 2 chorizo sausages
- 2 potatoes, peeled and diced
- 2 sweet potatoes, peeled and diced
- 2 carrots, peeled and sliced
- 1 onion, chopped
- 1 leek, sliced
- 1 can chickpeas, drained and rinsed
- 1 cabbage, chopped
- 1 tsp paprika
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Place the beef stew meat and pork ribs in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour.
- Add the chorizo, potatoes, sweet potatoes, carrots, onion, leek, chickpeas, paprika, bay leaf, salt, and pepper to the pot. Simmer for an additional 30 minutes.
- Add the cabbage to the pot and simmer for another 15 minutes, or until all the ingredients are tender.
- Remove the bay leaf and serve the Puchero Canario hot.
