Ingredients

  • 1 lb pork belly, skin on, cut into chunks
  • 1 cup white vinegar
  • 1 onion, sliced
  • 1 cucumber, thinly sliced
  • 1 sweet potato, grated
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp thyme
  • 1/2 tsp hot pepper sauce

Instructions

  1. In a large pot, combine the pork belly, white vinegar, onion, and enough water to cover the pork. Bring to a boil, then reduce heat and simmer for 1 hour.
  2. While the pork is simmering, prepare the sweet potato pudding. In a bowl, mix together the grated sweet potato, flour, baking powder, salt, black pepper, thyme, and hot pepper sauce. Form the mixture into small patties.
  3. After the pork has simmered for 1 hour, remove the pork from the pot and allow it to cool. Once cooled, slice the pork thinly.
  4. Arrange the sliced pork, cucumber, and sweet potato pudding on a plate. Serve with additional hot pepper sauce on the side.
