Pudding And Souse
Pudding and Souse is a traditional dish from Barbadian cuisine that combines the flavors of pickled pork and sweet potato pudding.
Ingredients
- 1 lb pork belly, skin on, cut into chunks
- 1 cup white vinegar
- 1 onion, sliced
- 1 cucumber, thinly sliced
- 1 sweet potato, grated
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp thyme
- 1/2 tsp hot pepper sauce
Instructions
- In a large pot, combine the pork belly, white vinegar, onion, and enough water to cover the pork. Bring to a boil, then reduce heat and simmer for 1 hour.
- While the pork is simmering, prepare the sweet potato pudding. In a bowl, mix together the grated sweet potato, flour, baking powder, salt, black pepper, thyme, and hot pepper sauce. Form the mixture into small patties.
- After the pork has simmered for 1 hour, remove the pork from the pot and allow it to cool. Once cooled, slice the pork thinly.
- Arrange the sliced pork, cucumber, and sweet potato pudding on a plate. Serve with additional hot pepper sauce on the side.
