Ingredients

  • 2 cups mashed sweet potatoes
  • 1 can (14 oz) coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 3 eggs

Instructions

  1. In a saucepan, combine the mashed sweet potatoes and coconut milk. Cook over medium heat, stirring constantly, until the mixture thickens.
  2. Stir in the sugar and salt until dissolved. Remove from heat and let it cool slightly.
  3. In a separate bowl, beat the eggs and vanilla extract. Gradually add the sweet potato mixture into the eggs, stirring constantly.
  4. Pour the mixture into a greased pudding mold or individual ramekins.
  5. Place the mold or ramekins in a large baking dish and fill the dish with hot water halfway up the sides of the mold/ramekins.
  6. Bake in a preheated oven at 350°F (175°C) for 40 minutes, or until the pudding is set.
  7. Remove from the oven and let it cool before refrigerating for at least 2 hours.
  8. Serve chilled and enjoy!
