Ingredients
- 2 cups mashed sweet potatoes
- 1 can (14 oz) coconut milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 3 eggs
Instructions
- In a saucepan, combine the mashed sweet potatoes and coconut milk. Cook over medium heat, stirring constantly, until the mixture thickens.
- Stir in the sugar and salt until dissolved. Remove from heat and let it cool slightly.
- In a separate bowl, beat the eggs and vanilla extract. Gradually add the sweet potato mixture into the eggs, stirring constantly.
- Pour the mixture into a greased pudding mold or individual ramekins.
- Place the mold or ramekins in a large baking dish and fill the dish with hot water halfway up the sides of the mold/ramekins.
- Bake in a preheated oven at 350°F (175°C) for 40 minutes, or until the pudding is set.
- Remove from the oven and let it cool before refrigerating for at least 2 hours.
- Serve chilled and enjoy!
