Ingredients
- 1 cup tapioca pearls
- 4 cups coconut milk
- 1 cup sugar
- 1/2 teaspoon salt
Instructions
- In a saucepan, combine the tapioca pearls, coconut milk, sugar, and salt.
- Let the mixture sit for 30 minutes to allow the tapioca pearls to soften.
- Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly.
- Once the mixture thickens, remove it from the heat and pour it into individual serving dishes.
- Chill the pudding in the refrigerator for at least 2 hours before serving.
