Ingredients

  • 1 cup tapioca pearls
  • 4 cups coconut milk

Instructions

  1. In a saucepan, combine the tapioca pearls, coconut milk, sugar, and salt.
  2. Let the mixture sit for 30 minutes to allow the tapioca pearls to soften.
  3. Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly.
  4. Once the mixture thickens, remove it from the heat and pour it into individual serving dishes.
  5. Chill the pudding in the refrigerator for at least 2 hours before serving.
