Ingredients

  • 2 cups basmati rice, washed and soaked for 30 minutes
  • 1 cup fresh mint leaves, finely chopped
  • 1 onion, thinly sliced
  • 2 green chilies, slit lengthwise
  • 1-inch ginger, grated
  • 4 cloves garlic, minced
  • 2 tomatoes, finely chopped
  • 1 cinnamon stick
  • 4 cloves
  • 2 cardamom pods
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 2 tablespoons ghee or oil
  • Salt to taste
  • 3 1/2 cups water

Instructions

  1. Heat ghee or oil in a large pot over medium heat. Add the cinnamon stick, cloves, cardamom pods, and cumin seeds. Sauté for a minute until fragrant.
  2. Add the sliced onions, green chilies, ginger, and garlic. Sauté until the onions turn golden brown.
  3. Stir in the chopped tomatoes and cook until they soften.
  4. Add the chopped mint leaves, turmeric powder, and garam masala. Cook for 2-3 minutes.
  5. Drain the soaked rice and add it to the pot. Stir gently to combine with the mint and spice mixture.
  6. Pour in the water, add salt, and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
  7. Fluff the pulao with a fork and let it rest for a few minutes before serving.
