Pudina Pulao (fragrant Mint Pulao)
Pudina Pulao, also known as Fragrant Mint Pulao, is a flavorful and aromatic rice dish from Indian cuisine. It is made with basmati rice, fresh mint leaves, and a blend of spices, creating a refreshing and delicious meal.
Ingredients
- 2 cups basmati rice, washed and soaked for 30 minutes
- 1 cup fresh mint leaves, finely chopped
- 1 onion, thinly sliced
- 2 green chilies, slit lengthwise
- 1-inch ginger, grated
- 4 cloves garlic, minced
- 2 tomatoes, finely chopped
- 1 cinnamon stick
- 4 cloves
- 2 cardamom pods
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 2 tablespoons ghee or oil
- Salt to taste
- 3 1/2 cups water
Instructions
- Heat ghee or oil in a large pot over medium heat. Add the cinnamon stick, cloves, cardamom pods, and cumin seeds. Sauté for a minute until fragrant.
- Add the sliced onions, green chilies, ginger, and garlic. Sauté until the onions turn golden brown.
- Stir in the chopped tomatoes and cook until they soften.
- Add the chopped mint leaves, turmeric powder, and garam masala. Cook for 2-3 minutes.
- Drain the soaked rice and add it to the pot. Stir gently to combine with the mint and spice mixture.
- Pour in the water, add salt, and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
- Fluff the pulao with a fork and let it rest for a few minutes before serving.
