Pudina Pulao (fragrant Mint Rice)

Ingredients

  • 2 cups basmati rice
  • 1/2 cup fresh mint leaves
  • 1 onion, thinly sliced
  • 2 green chilies, slit
  • 1 cinnamon stick
  • 4 cloves
  • 4 cardamom pods
  • 1 teaspoon cumin seeds
  • 2 tablespoons ghee (clarified butter) or oil
  • Salt to taste
  • 3 1/2 cups water

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
  2. In a large pot, heat the ghee or oil over medium heat. Add the cinnamon stick, cloves, cardamom pods, and cumin seeds. Sauté for 1-2 minutes until fragrant.
  3. Add the sliced onions and green chilies to the pot. Cook until the onions are golden brown.
  4. Add the drained rice to the pot and stir gently to coat the rice with the spices and onions.
  5. Add the fresh mint leaves and salt to the pot, then pour in the water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
  6. Fluff the rice with a fork and remove from heat. Let it sit, covered, for 5 minutes before serving.
