Pudina Pulao (fragrant Mint Rice)
Pudina Pulao, also known as Fragrant Mint Rice, is a popular Bangladeshi dish that is aromatic, flavorful, and easy to prepare. This dish is perfect for a quick weeknight meal or for entertaining guests.
Ingredients
- 2 cups basmati rice
- 1/2 cup fresh mint leaves
- 1 onion, thinly sliced
- 2 green chilies, slit
- 1 cinnamon stick
- 4 cloves
- 4 cardamom pods
- 1 teaspoon cumin seeds
- 2 tablespoons ghee (clarified butter) or oil
- Salt to taste
- 3 1/2 cups water
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
- In a large pot, heat the ghee or oil over medium heat. Add the cinnamon stick, cloves, cardamom pods, and cumin seeds. Sauté for 1-2 minutes until fragrant.
- Add the sliced onions and green chilies to the pot. Cook until the onions are golden brown.
- Add the drained rice to the pot and stir gently to coat the rice with the spices and onions.
- Add the fresh mint leaves and salt to the pot, then pour in the water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
- Fluff the rice with a fork and remove from heat. Let it sit, covered, for 5 minutes before serving.
