Puerto Rican Paradise (Paraíso Puertorriqueño)

Ingredients
- 2 lbs bone-in chicken pieces
- 1 cup sofrito
- 2 cups white rice
- 1 can (15 oz) pigeon peas, drained and rinsed
- 1 cup chicken broth
- 1 tsp adobo seasoning
- 1 tsp sazón seasoning
- 2 tbsp vegetable oil
- 1 green bell pepper, diced
- 1 onion, diced
- 3 garlic cloves, minced
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Season the chicken pieces with adobo seasoning and sazón. Brown the chicken on all sides, then remove from the pot and set aside.
- In the same pot, sauté the sofrito, onion, green pepper, and garlic until the vegetables are tender and the mixture is fragrant.
- Add the rice to the pot and stir to coat it with the sofrito mixture. Cook for 2-3 minutes.
- Pour in the chicken broth and add the pigeon peas and bay leaf. Season with salt and pepper to taste.
- Return the browned chicken pieces to the pot, nestling them into the rice mixture.
- Bring the pot to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the rice is tender and the chicken is cooked through.
- Remove the bay leaf and discard. Fluff the rice with a fork and serve the Paraíso Puertorriqueño hot.
