Ingredients

  • 3 lbs pork shoulder
  • 6 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 12 bao buns
  • 1 cup pickled onions
  • 1/2 cup cilantro, chopped

Instructions

  1. Preheat the oven to 325°F.
  2. In a small bowl, mix the minced garlic, oregano, cumin, paprika, salt, and black pepper to create a spice rub.
  3. Score the pork shoulder and rub the spice mixture all over the meat.
  4. Place the pork shoulder in a roasting pan and pour the orange juice and lime juice over it.
  5. Cover the roasting pan with foil and roast in the oven for 3.5 to 4 hours, or until the pork is tender and easily shreds with a fork.
