Ingredients

  • 3 lbs pork shoulder
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 12 small flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup chopped cilantro
  • 1/2 cup thinly sliced red onion
  • 1/2 cup hoisin sauce

Instructions

  1. Preheat the oven to 325°F.
  2. In a small bowl, mix together the garlic, oregano, cumin, paprika, salt, pepper, orange juice, and lime juice to create a marinade.
  3. Place the pork shoulder in a roasting pan and rub the marinade all over the meat.
  4. Cover the roasting pan with foil and roast the pork in the preheated oven for 2.5 to 3 hours, or until the meat is tender and easily shreds with a fork.
  5. Remove the pork from the oven and let it rest for 10 minutes before shredding it with two forks.
  6. Warm the flour tortillas in a dry skillet or in the oven.
  7. Assemble the tacos by placing a portion of the shredded pork onto each tortilla, then topping with lettuce, tomatoes, cilantro, and red onion. Drizzle with hoisin sauce.
