Puffin Piroshki

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup sour cream
  • 1 egg
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 1 pound puffin meat, cooked and shredded
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Stir in the sour cream until the dough comes together. Turn the dough out onto a lightly floured surface and knead gently until smooth.
  3. Divide the dough into 6 equal portions and roll each portion into a ball. Flatten each ball into a disk and refrigerate for 30 minutes.
  4. Meanwhile, heat the vegetable oil in a skillet over medium heat. Add the chopped onion and cook until softened.
  5. Add the shredded puffin meat to the skillet and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally.
  6. Preheat the oven to 375°F (190°C). Roll out each dough disk into a circle and place a spoonful of the puffin filling in the center. Fold the dough over the filling and crimp the edges to seal.
  7. Place the piroshki on a baking sheet and brush with beaten egg. Bake for 20-25 minutes or until golden brown.
