Pugliese Fish Soup (zuppa Di Pesce Alla Pugliese)
Pugliese Fish Soup, also known as Zuppa di Pesce alla Pugliese, is a traditional seafood dish from the Puglia region of Italy. This flavorful and aromatic soup is a perfect representation of the region's coastal cuisine, featuring a variety of fresh fish and shellfish in a rich tomato broth.
Ingredients
- 1 lb mixed fish fillets (such as cod, halibut, or sea bass)
- 1/2 lb mixed shellfish (such as clams, mussels, and shrimp)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 4 cups fish or vegetable broth
- 1/2 cup dry white wine
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Crusty bread for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Pour in the white wine and let it simmer for a few minutes to cook off the alcohol.
- Add the crushed tomatoes and fish or vegetable broth to the pot. Bring the mixture to a gentle boil.
- Reduce the heat to low and let the soup simmer for 20 minutes to allow the flavors to meld.
- Add the mixed fish fillets and shellfish to the pot. Cover and cook for an additional 10-15 minutes, or until the fish is cooked through and the shellfish have opened.
- Season the soup with salt and pepper to taste, then stir in the chopped parsley.
- Divide the soup into bowls and serve with crusty bread for dipping.
