Pugliese-style Stuffed Cabbage Rolls

Ingredients

  • 1 head of cabbage
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • 2 cups tomato sauce
  • 1 cup beef broth

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  2. In a bowl, combine the ground beef, cooked rice, onion, garlic, parsley, Parmesan cheese, egg, salt, and pepper. Mix well.
  3. Place a spoonful of the meat mixture onto each cabbage leaf and roll up, tucking in the sides as you go.
  4. In a large pot, spread a layer of tomato sauce. Place the cabbage rolls seam side down in the pot. Pour the remaining tomato sauce and beef broth over the rolls.
  5. Cover and simmer over low heat for 1 hour, or until the cabbage is tender and the filling is cooked through.
