Pugliese-style Stuffed Mushrooms

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Finely chop the mushroom stems.
  3. In a bowl, combine the chopped mushroom stems, breadcrumbs, Parmesan cheese, garlic, parsley, and olive oil. Season with salt and pepper.
  4. Stuff each mushroom cap with the breadcrumb mixture and place them on a baking sheet.
