Pugliese-style Stuffed Onions

Ingredients

  • 4 large onions
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel the onions and cut a small slice off the top and bottom of each onion to create a flat surface.
  3. Scoop out the center of each onion, leaving about 2-3 layers of onion intact. Chop the scooped-out onion and set aside.
  4. In a bowl, combine the breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, and the chopped onion. Season with salt and pepper, and drizzle with olive oil. Mix well.
  5. Stuff each onion with the breadcrumb mixture, pressing gently to pack the filling.
  6. Place the stuffed onions in a baking dish, drizzle with a little more olive oil, and cover with foil.
  7. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes, or until the onions are tender and the filling is golden brown.
