Ingredients
- 4 large onions
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Peel the onions and cut a small slice off the top and bottom of each onion to create a flat surface.
- Scoop out the center of each onion, leaving about 2-3 layers of onion intact. Chop the scooped-out onion and set aside.
- In a bowl, combine the breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, and the chopped onion. Season with salt and pepper, and drizzle with olive oil. Mix well.
- Stuff each onion with the breadcrumb mixture, pressing gently to pack the filling.
- Place the stuffed onions in a baking dish, drizzle with a little more olive oil, and cover with foil.
- Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes, or until the onions are tender and the filling is golden brown.
- Serve the Pugliese-style Stuffed Onions hot, garnished with additional chopped parsley if desired.
