Pugliese-style Stuffed Plums

Ingredients

  • 8 ripe plums
  • 100g almond meal
  • 50g sugar
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 2 tbsp breadcrumbs
  • 2 tbsp olive oil

Instructions

  1. Pit the plums and cut a small portion off the bottom to create a flat surface for them to stand on.
  2. In a bowl, mix the almond meal, sugar, cinnamon, and vanilla extract.
  3. Stuff each plum with the almond mixture and place them in a baking dish.
  4. Sprinkle the breadcrumbs over the stuffed plums and drizzle with olive oil.
  5. Cover the baking dish with foil and bake in a preheated oven at 350°F for 20 minutes.
  6. Remove the foil and bake for an additional 5 minutes until the plums are tender and the top is golden brown.
