Pugliese-style Stuffed Potatoes
These Pugliese-style stuffed potatoes are a delicious and hearty dish that combines the flavors of Puglia, Italy with the comfort of a classic stuffed potato.
Ingredients
- 4 large potatoes
- 1 cup grated Parmesan cheese
- 1/2 cup chopped fresh parsley
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.
- Remove the potatoes from the oven and let them cool slightly. Cut the top off each potato and scoop out the flesh into a bowl, leaving a shell about 1/4 inch thick.
- Mash the potato flesh with Parmesan cheese, parsley, olive oil, salt, and pepper. Spoon the mixture back into the potato shells.
- Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the tops are golden brown.
