Ingredients

  • 4 large potatoes
  • 1 cup grated Parmesan cheese
  • 1/2 cup chopped fresh parsley
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.
  3. Remove the potatoes from the oven and let them cool slightly. Cut the top off each potato and scoop out the flesh into a bowl, leaving a shell about 1/4 inch thick.
  4. Mash the potato flesh with Parmesan cheese, parsley, olive oil, salt, and pepper. Spoon the mixture back into the potato shells.
  5. Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the tops are golden brown.
