Ingredients

  • 1 cup Pugliese taralli, crushed

  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the onion, carrots, and celery, and cook until softened.
  2. Add the garlic, crushed taralli, diced tomatoes, oregano, and basil. Cook for a few minutes, then pour in the broth.
  3. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.
  4. Season with salt and pepper to taste.
  5. Serve the soup hot, topped with grated Parmesan cheese.
