Ingredients
- 1 cup Pugliese taralli, crushed
- 4 cups chicken or vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat some olive oil over medium heat. Add the onion, carrots, and celery, and cook until softened.
- Add the garlic, crushed taralli, diced tomatoes, oregano, and basil. Cook for a few minutes, then pour in the broth.
- Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.
- Season with salt and pepper to taste.
- Serve the soup hot, topped with grated Parmesan cheese.
