Ingredients

  • 2 ripe bananas, mashed
  • 1 cup grated coconut
  • 1 cup all-purpose flour
  • 1/2 cup coconut milk
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a bowl, combine mashed bananas, grated coconut, flour, coconut milk, sugar, vanilla extract, and salt. Mix well to form a smooth batter.
  2. Heat a non-stick pan over medium heat and lightly grease with coconut oil.
  3. Pour a ladleful of the batter onto the pan and spread it into a round shape. Cook for 2-3 minutes until the bottom is golden brown, then flip and cook the other side until golden brown.
  4. Repeat with the remaining batter, greasing the pan as needed.
  5. Serve the Pulaka Keke warm with a sprinkle of grated coconut on top.
