Pulaka Keke, or Banana and Coconut Pancakes, are a traditional dish from Tuvalu that are perfect for a delicious breakfast or snack.
Ingredients
- 2 ripe bananas, mashed
- 1 cup grated coconut
- 1 cup all-purpose flour
- 1/2 cup coconut milk
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a bowl, combine mashed bananas, grated coconut, flour, coconut milk, sugar, vanilla extract, and salt. Mix well to form a smooth batter.
- Heat a non-stick pan over medium heat and lightly grease with coconut oil.
- Pour a ladleful of the batter onto the pan and spread it into a round shape. Cook for 2-3 minutes until the bottom is golden brown, then flip and cook the other side until golden brown.
- Repeat with the remaining batter, greasing the pan as needed.
- Serve the Pulaka Keke warm with a sprinkle of grated coconut on top.
