Pulao with Puffed Rice Biryani, also known as Zesty Nargis Pulao Biryani, is a flavorful and aromatic dish from the Uttara Karnataka Cuisine. This unique recipe combines the goodness of pulao with the crunch of puffed rice biryani, creating a delightful fusion of flavors and textures.
Ingredients
- 1 cup basmati rice
- 1 cup puffed rice (murmura)
- 1 onion, thinly sliced
- 1 tomato, finely chopped
- 1/2 cup mixed vegetables (carrots, peas, beans)
- 1/4 cup yogurt
- 1 tsp ginger-garlic paste
- 1 tsp biryani masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/4 tsp garam masala
- 2 tbsp ghee
- 2 cups water
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- Heat ghee in a pan and sauté the sliced onions until golden brown.
- Add the ginger-garlic paste and sauté for a minute.
- Now, add the mixed vegetables and chopped tomatoes. Cook until the vegetables are slightly tender.
- Next, add the soaked basmati rice, puffed rice, biryani masala, turmeric powder, red chili powder, garam masala, and salt. Mix well.
- Whisk the yogurt and pour it into the pan. Stir gently to combine all the ingredients.
- Pour 2 cups of water and bring the mixture to a boil. Then, cover and cook on low heat until the rice is fully cooked and the water is absorbed.
- Garnish with fresh coriander leaves and serve hot.
