Ingredients

  • 2 cups basmati rice
  • 1 onion, thinly sliced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1/2 cup puffed rice
  • 1/4 cup peanuts
  • 1/4 cup chopped cilantro
  • 1/4 cup grated coconut
  • 2 tablespoons lemon juice
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 2-3 green chilies, finely chopped
  • 3-4 curry leaves
  • 2 tablespoons oil
  • Salt to taste

Instructions

  1. Rinse the basmati rice and soak it in water for 30 minutes.
  2. Heat oil in a large pot and add mustard seeds, cumin seeds, and curry leaves. Sauté until the seeds start to crackle.
  3. Add sliced onions and sauté until they turn golden brown.
  4. Stir in the mixed vegetables and cook for 2-3 minutes.
  5. Drain the soaked rice and add it to the pot. Stir well to coat the rice with the vegetables.
  6. Add turmeric powder, salt, and 4 cups of water. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the rice is cooked.
  7. While the pulao is cooking, prepare the puffed rice salad by mixing puffed rice, peanuts, chopped cilantro, grated coconut, green chilies, and lemon juice in a bowl.
  8. Once the pulao is ready, serve it hot with the zesty puffed rice salad on the side.
