Ingredients
- 2 cups basmati rice
- 1 onion, thinly sliced
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1/2 cup puffed rice
- 1/4 cup peanuts
- 1/4 cup chopped cilantro
- 1/4 cup grated coconut
- 2 tablespoons lemon juice
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 2-3 green chilies, finely chopped
- 3-4 curry leaves
- 2 tablespoons oil
- Salt to taste
Instructions
- Rinse the basmati rice and soak it in water for 30 minutes.
- Heat oil in a large pot and add mustard seeds, cumin seeds, and curry leaves. Sauté until the seeds start to crackle.
- Add sliced onions and sauté until they turn golden brown.
- Stir in the mixed vegetables and cook for 2-3 minutes.
- Drain the soaked rice and add it to the pot. Stir well to coat the rice with the vegetables.
- Add turmeric powder, salt, and 4 cups of water. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the rice is cooked.
- While the pulao is cooking, prepare the puffed rice salad by mixing puffed rice, peanuts, chopped cilantro, grated coconut, green chilies, and lemon juice in a bowl.
- Once the pulao is ready, serve it hot with the zesty puffed rice salad on the side.
