Pulao with Puffed Rice, also known as Zesty Nargis Pulao, is a flavorful and aromatic dish from the Uttara Karnataka Cuisine. This unique pulao is made with puffed rice, a variety of spices, and vegetables, creating a delicious and satisfying meal.
Ingredients
- 2 cups puffed rice
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 2 tbsp cooking oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for a minute. Then, add the chopped tomatoes and cook until they turn soft.
- Next, add the mixed vegetables, turmeric powder, red chili powder, and garam masala. Cook for a few minutes until the vegetables are slightly tender.
- Now, add the puffed rice and mix well with the vegetables and spices. Cook for 5-7 minutes, stirring occasionally.
- Season with salt and garnish with fresh coriander leaves before serving.
