Ingredients
- 4 chicken thighs
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 cup green olives
- 1 cup cherry tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add the chicken thighs and cook until browned on both sides. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened. Add the minced garlic, dried oregano, thyme, and red pepper flakes. Cook for another minute.
- Return the chicken thighs to the skillet. Add the green olives, cherry tomatoes, and chicken broth. Cover and simmer for 45-50 minutes, or until the chicken is cooked through.
- Serve the Arbëreshë Chicken with Olives hot, garnished with fresh herbs if desired.
