Pulske fritule, also known as Pula Fritule, are traditional Croatian fritters that are popular during the festive season. These small, deep-fried pastries are flavored with citrus zest and brandy, making them a delightful treat for special occasions.
Ingredients
- 2 cups all-purpose flour
- 2 eggs
- 1/2 cup granulated sugar
- 1/2 cup plain yogurt
- Zest of 1 lemon
- Zest of 1 orange
- 2 tbsp brandy
- 1/2 tsp baking powder
- Pinch of salt
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs, then add the yogurt, citrus zest, and brandy. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until a thick batter forms.
- Heat the vegetable oil in a deep pot or fryer to 350°F (175°C).
- Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes per batch.
- Remove the fritters with a slotted spoon and drain on paper towels.
- Dust the fritters with powdered sugar before serving.
