Pumpkin and Chickpea Tagine (Djaj Bil-Qara)

Ingredients

  • 1 small pumpkin, peeled and cubed
  • 1 can chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large tagine or deep skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic, ground cumin, coriander, paprika, cinnamon, and cayenne pepper. Cook for another 2 minutes, stirring constantly.
  4. Add the cubed pumpkin and chickpeas to the skillet, and pour in the vegetable broth. Season with salt and pepper.
  5. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 45 minutes, or until the pumpkin is tender.
  6. Once cooked, garnish with fresh cilantro and serve hot.
