Pumpkin and Chickpea Tagine (Djaj Bil-Qara)
Djaj Bil-Qara is a traditional Libyan tagine dish that combines the sweetness of pumpkin with the heartiness of chickpeas, creating a flavorful and satisfying meal.
Ingredients
- 1 small pumpkin, peeled and cubed
- 1 can chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 2 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large tagine or deep skillet, heat the olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, coriander, paprika, cinnamon, and cayenne pepper. Cook for another 2 minutes, stirring constantly.
- Add the cubed pumpkin and chickpeas to the skillet, and pour in the vegetable broth. Season with salt and pepper.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 45 minutes, or until the pumpkin is tender.
- Once cooked, garnish with fresh cilantro and serve hot.
