Буьйраш (Pumpkin and Feta Salad) is a traditional dish from Chechen cuisine that combines the sweetness of pumpkin with the tanginess of feta cheese, creating a delightful and refreshing salad.
Ingredients
- 500g pumpkin, peeled and cubed
- 200g feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley
Instructions
- Steam the pumpkin cubes for 10-12 minutes or until tender. Let them cool.
- In a large bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper.
- Add the steamed pumpkin cubes to the bowl and gently toss to coat them with the dressing.
- Add the crumbled feta cheese and chopped parsley to the bowl and gently toss to combine all the ingredients.
- Adjust seasoning if needed and serve the salad immediately.
