Pumpkin and Feta Salad (Буьйраш)

Ingredients

  • 500g pumpkin, peeled and cubed
  • 200g feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. Steam the pumpkin cubes for 10-12 minutes or until tender. Let them cool.
  2. In a large bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper.
  3. Add the steamed pumpkin cubes to the bowl and gently toss to coat them with the dressing.
  4. Add the crumbled feta cheese and chopped parsley to the bowl and gently toss to combine all the ingredients.
  5. Adjust seasoning if needed and serve the salad immediately.
