Pumpkin and Lentil Soup (ТӀухумаш)

Ingredients

  • 1 small pumpkin, peeled and diced
  • 1 cup red lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the diced pumpkin, red lentils, cumin, and paprika to the pot. Stir to combine.
  4. Pour in the vegetable broth and bring the soup to a boil.
  5. Reduce the heat to low, cover the pot, and let the soup simmer for 30 minutes, or until the pumpkin and lentils are tender.
  6. Season the soup with salt and pepper to taste.
  7. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  8. Serve the тӀухумаш (Pumpkin and Lentil Soup) hot, garnished with a dollop of yogurt or a sprinkle of fresh herbs.
