Pumpkin Bisque (pumpkin Soup)
Pumpkin Bisque, also known as Pumpkin Soup, is a popular dish in Barbadian cuisine, especially during the cooler months. This creamy and flavorful soup is perfect for warming up on a chilly evening.
Ingredients
- 4 cups pumpkin, peeled and cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon curry powder
- 1/2 teaspoon nutmeg
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the pumpkin, vegetable broth, coconut milk, curry powder, nutmeg, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the pumpkin is tender.
- Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend in batches until smooth.
- Return the soup to the pot and heat through. Adjust seasoning if necessary.
- Serve hot, garnished with a drizzle of coconut milk and a sprinkle of nutmeg, if desired.
