Ingredients

  • 4 cups pumpkin, peeled and cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon curry powder
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the pumpkin, vegetable broth, coconut milk, curry powder, nutmeg, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the pumpkin is tender.
  3. Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend in batches until smooth.
  4. Return the soup to the pot and heat through. Adjust seasoning if necessary.
  5. Serve hot, garnished with a drizzle of coconut milk and a sprinkle of nutmeg, if desired.
